Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, mix together crushed pineapple (with juice), sugar, vegetable oil, and eggs until well combined.
In a separate bowl, whisk together flour, baking soda, and salt.
Gently add the dry mixture to the wet ingredients and stir until just combined. Do not overmix.
Add the vanilla extract and stir lightly.
Grease a cake pan and pour in the batter.
Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
This cake is delicious on its own or topped with whipped cream or a dusting of powdered sugar!
