Ingredients
  

  • 1 can crushed pineapple 20 oz, with juice
  • 1 cup sugar
  • 1/3 cup vegetable oil
  • 2 large eggs room temperature
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, mix together crushed pineapple (with juice), sugar, vegetable oil, and eggs until well combined.
  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gently add the dry mixture to the wet ingredients and stir until just combined. Do not overmix.
  • Add the vanilla extract and stir lightly.
  • Grease a cake pan and pour in the batter.
  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

This cake is delicious on its own or topped with whipped cream or a dusting of powdered sugar!
